Winemaker Notes: An austere, complex, generally very aromatic wine, which expresses all the wonders of the forest and the pristine mountains. On the nose, mainly emerge wild berries, black cherry, plum, perfectly integrated with the vegetable scents of the undergrowth, musk, pine needles, oak leaves. But a more careful analysis will reveal the more material organoleptic characteristics, linked to the rock, graphite often with balsamic puffs, black pepper and ink.
Aging: At least 18 months in tonneaux and barriques
Winemaking: Our Cabernet grow up in the Langhe and Roero hills. Once the grapes achieve the right ripeness degree, the harvested bunches are transported to the cellar where they are carefully selected and destemmed. Softly pressed it stored in steel tanks for the first fermentation phase when the colour, aromas, tannins and structure from the skin of the berries are extracted. After this first phase, they are separated and transferred to tonneaux and barriques.
Malolactic Fermentation: Takes place inside the barriques and tonneaux, where they remain for at least 18 months. In the following months the wine refines through the exchange of oxygen allowed by the porosity of the wood, which softens the tannin making it less invasive and more elegant and enriching the wine with a greater complexity of aromas such as the hint of vanilla typical of oak.

Historical Origin: The monk known as Bertin must have liked his wine—and he must have had a great vineyard to grow it, for it is after this 'field' that the wine we now know as Gevrey-Chambertin is named—the field of Bertin, (or Champ de Bertin). The village of Gevrey added the name of its most famous vineyard, Chambertin to its name in 1847.
Reputation: Since then the legendary renown of this hallowed terroir has grown and grown. Some say that only the monumental name of Romanée Conti can match or surpass it in terms of world-beating red Burgundies.
Appellation Structure: In this part of the Côte de Nuits there are no fewer than nine Grands Crus vineyards (more than any other Burgundy village). As if this was not enough, there are also 26 Premiers Crus climats here. Generally speaking, look north for the Premiers Crus; south for the Grands Crus; and on lower ground for the Village appellation wines.
